A Range Built to Be Kept
La Cornue has been building in France since 1908 and the philosophy has barely changed: heavy brass and steel, a vaulted oven, and burners you can trust for a hard sear or a bare simmer. What that means for repair is unusual in the modern kitchen. There is no diagnostic screen and essentially no board to fail, so the faults are mechanical: valves that stiffen, ports that clog, thermocouples that weaken, hinges that wear under the weight of solid brass. All of it is repairable. This is one of the very few appliances left where a range built in the 1980s can be brought fully back to life, and where doing so is unquestionably worth it.
Setup and Care
Two things matter most. First, altitude: these ranges arrive jetted for European conditions, and at Lone Tree's elevation a unit that was never re-jetted will burn yellow, soot the pans and refuse to simmer cleanly. That gets blamed on the burners and it is setup rather than failure. Second, the materials deserve their proper care. The brass wants a real brass polish rather than a kitchen spray, the enamel dislikes abrasives, and the burner ports benefit from a pin whenever something dries in them. Kept that way, these ranges get passed down rather than replaced.
